Chardonnay - The vines
Located beside the ruins of the old castle, this climat boasts the best aspect of Saint-Romain. An application has been made by the winemakers for this climat to be labelled premier cru. Watch this space! - Vinification and maturation
Vinified in stainless steel tanks until halfway through fermentation, then in barrels to add aromatic finesse. Maintained at a low temperature (18–20°C) to retain all of the fruit and structure. Matured for 8 months in barrels (no new barrels); from 2019, 15% in new barrels, to bring body and finesse. - Food and wine pairing
This Saint-Romain will go perfectly with chicken blanquette or king prawns.
